MANGALORE BAJJI

Goli Baje / Mangalore Bajji – popular snack in Tulunadu


Goli Baje is one of the popular snack in Tulunadu.”Bisi Bisi Goli Baje” is a default snack in all Udupi hotels during evening tea time. It is also known asMangalore BajjiUnlike Bonda, Goli Baje/Mangalore bajji is softand elastic but tastes awesome. If you haven’t tried Goli Baje before, now is your chance to taste this snack.

Ingredients

  • Maida/All purpose flour – 1 Cup
  • Yogurt/Curds- 1/2 Cup
  • Ginger- 1″ piece
  • Green chillies -2
  • Curry leaves- 2 strands
  • Baking Soda- 1/4 tbsp
  • Coconut cut in to small pieces-20
  • Salt to taste
  • Oil to deep fry

Preparation

  1. Finely chop ginger, chillies and curry leaves.
  2. Mix maida, yogurt and salt to make batter. Add water if required.Let it sit for 3 to 4 hours. The consistency of the dough should be thicker than dosa batter, thinner than chapati dough. If  the batter is not of right consistency the Goli Baje may become tough like tennis ball or it may consume much oil.

Method

  • Add all chopped ingredients, coconut pieces and baking soda to the batter. Mix it well.
  • Heat oil in a heavy bottomed pan. Wet your fingers, scoop out a ping pong ball sized batter with your hand and drop in to oil.  They puff up in size.
  • Cook it on low to medium heat.
  • Turn them around till they are fried golden brown.
  • Serve them hot with coconut chutney and Udupi Rasam/Sambar.
These Goli Bajes should be served hot and consumed immediately or else they become stringy and lose their crispiness.
